Queso Blanco Rice
You’ve had or heard of Queso Blanco cheese right? If not, it’s a white cheddar type cheese. Velveeta brand has some now. Even some restaurants use it for their Queso Dip. I like it. So much, that I put it in my Queso Blanco Rice here.
It doesn’t take a scientist at this point to guess what I mixed with this rice, does it? Yup…Queso Blanco cheese. We here in my house are cheese freaks and this rice is OMG so cheesy. It doesn’t look all that great…kinda reminds me of cottage cheese. And you don’t want me to get started on how I feel about that stuff.
But not everything that looks bad, tastes bad. If you’re a cheese freak like me, then you’ll love this stuff. All you need is rice, queso blanco cheese and some milk. 3 ingredients…that’s it. And it takes less than 20 minutes to make. The majority of the time was waiting on the rice to cook.
And yes, I did cheat and use boil-in-bag rice. I served this with my White Chicken Enchiladas. I guess I had a white theme going on that day.
