Have you ever cooked in a pressure cooker?  My Mom gave me a pressure cooker and while she was here visiting, we made a few things. This roast beef being one.

If you haven’t ever cooked in one, the deal is, that you cook your foods in 70% of the normal cook time.  Speeds things up if you are looking for that.  I’m always, ok, not always, but most of the time, looking for a way to speed up my cooking time.  Gots things to do.  This roast beef took 1 hour and 18 minutes to cook in the pressure cooker as opposed to 2 – 2 1/2 hours in a standard oven.  Not bad.  You’ll want to go a little longer if you want it to resemble a pot roast and just fall apart.

The Roast Beef turned out very tasty if I say so myself.  I seared it first with onions and bacon and then threw them all in the roasting pan.   I could definitely taste the onion and bacon in the roast beef.  By all means, add whatever floats your boat.    I baked this with the traditional carrots and potatoes and topped it off with gravy. I made some big ole biscuits to have something to slop up that gravy too.

Instructions
  1. Preheat Pressure Cooker to 450°
  2. Heat oil (I used avocado oil) in a skillet and sear Roast Beef, bacon and onions on all sides.

  3. Cut potatoes and carrots.

  4. Place Roast Beef with bacon and onions, carrots and potatoes in the roasting pan. Add 1/2 cup of water.

  5. Loosely cover with foil.

  6. Bake 75-78 minutes. **If you want your roast beef more tender, add to the cooking time.
