Chicken Fried Rice

I did it. I finally made some fried rice. Now I can’t wait to make some more.  I love fried rice. When I was a teenager, we were always ordering fried rice from a Chinese take out. My fav then was ham fried rice. Now, I love them all.  Well, I did come across one online the other day that was Ketchup Fried Rice. Even if I could eat it (can’t have tomatoes), I don’t think I would.  Would you?


Like some of the other dishes I’ve made thinking they would be hard, this wasn’t hard at all.  Maybe I don’t have a lot of self confidence.  Who knows. And, of course, I cheated some.  I bought the pre-cooked grilled chicken strips, frozen peas and carrots and used instant boil in a bag rice. 🙂  That’s how I roll most of the time.

I eat this as my main meal, with the chicken, but you probably eat it as a side dish.  You should try and have an Ground Chicken Homemade Egg Roll, or two or three to go with it.  Just those alone will fill you up.

Instructions
  1. Cook & Dice Chicken. Or if you're like me...microwave pre-cooked chicken for about 1 minute.
  2. Preheat Skillet (or wok) to medium heat. Add oil. Once heated, add white onions and peas and carrots. Cook until tender. Slide mixture to side of pan.

  3. Scramble the egg on the other side of the pan. Once cooked, mix with the veggies.

  4. Add rice and chicken to the mixture. Pour in soy sauce and mix. Stir and cook until heated thru and soy sauce is completely combined.

  5. Add chopped green onions, if desired. Serve!
