I know, it sounds weird. But, it tasted good. 😉  This just came to me.  It’s so light and fresh. I eat popcorn chicken salads quite often.  This particular day, I decided to just have the popcorn chicken and cucumber and see what happened.  It happened.  I liked it.  I think next time I’ll cut the cucumber smaller…like in quarters instead of halves.

I used popcorn chicken from Walmart. All you have to do is heat it up in the oven or toaster oven for 12-14 minutes. You could also choose to use some already cooked chicken or heck, cook your own.  Whatever floats your boat.  Then add the cucumbers, ranch dressing and top it with some french fried onions.  Or not, if you don’t like those.  But I do and it topped off my salad perfectly.

Instructions
  1. Place chicken in a bowl.

  2. Place cucumber on top of chicken.

  3. Pour ranch dressing on top. Mix/Toss.
  4. Sprinkle on french fried onions, if desired. CHOW.
