Bacon and Egg Breakfast Cups
Looking for a low carb and easy meal? Here ya go. Aren’t these cute too? Don’t want to break out the forks? Don’t have to with these. If you want…use more bacon! I’m all for that. I went light on the bacon cuz my daughter isn’t as fond of bacon as I am and I wanted her to eat these. Good source of protein right there in that little cup.
All you need for these is bacon and eggs. Of course, you may want to top off with some cheese. I did half of mine with cheese for my Mom and daughter. I’m trying to cut back on cheese. I tried cold turkey, but it didn’t work for me. LOL So, I decided to just cut back and eat it in moderation. Bleck. But, my stomach is appreciating it.
All you do is lay the bacon in the muffin tin, crossways. If you want more bacon, use 2 slices per cup. Then you’ll have bacon surrounding the eggs completely. Rock on! Then you pour your beaten eggs over the bacon. Ba-bam. If you do add the cheese, you could do so before putting them in the oven or after. Either way is good.
Will you add more bacon? Will you put cheese on it? If it was up to me, I’d do both. 🙂
